Lòng non heo cho vào tô lớn, thêm vào 1 muỗng canh giấm, 1 muỗng canh muối và bóp kỹ rồi sả lại vài lần với nước cho thật sạch mùi hôi.
Lá lốt rửa sạch sẽ, để ráo nước rồi cắt khúc ngắn. Hành lá cắt khúc. Tỏi bóc vỏ, băm nhỏ. Đun sôi nồi nước với sả và gừng cắt lát, cho lòng non vào luộc khoảng 1-2 phút thì vớt ra để ráo nước, cắt thành những miếng nhỏ vừa ăn.
Đun nóng 2 muỗng canh dầu ăn, phi thơm tỏi băm, thêm dầu màu điều rồi cho lòng non đã cắt vào đảo đều tay. Mở to lửa, nêm nước mắm, đường, hạt nêm và tiêu cho vừa miệng. Khi lòng non đã chín thì cho lá lốt và hành lá đã cắt vào cùng rồi đảo đều cho lá lốt vừa chín là tắt bếp.
